  • ½ cup coconut oil (melted)
  • 1 ½ cups all-purpose flour (or gluten-free substitute)
  • 1 ½ cups quick oats
  • ⅓ cup maple syrup
  • ⅓ cup coconut sugar (or granulated)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup raspberry preserves

Instructions

  1. Preheat oven to 350°F and spray an 8×8 baking pan with non-stick spray.
  2. In a large mixing bowl, combine all base ingredients until well mixed.
  3. Press two-thirds of the mixture into the prepared pan evenly.
  4. Spread raspberry preserves over the oat mixture, leaving a ½ inch border around edges.
  5. Crumble the remaining oat mixture on top and lightly press down.
  6. Bake for about 25-30 minutes until lightly browned on top.
  7. Cool in the pan on a cooling rack before cutting into squares.
