  • Avocado oil spray (or 1 to 2 tsp liquid oil)

  • 1/4 tsp ground pepper
  • Additional salt to taste

Instructions

  1. Slice the zucchini into 1/8 inch thick slices using a mandolin slicer or food processor.
  2. Layer the slices in a colander, sprinkling each layer with salt. Let it drain for one hour.
  3. Preheat your oven to 225°F and line two baking sheets with parchment paper.
  4. Pat the zucchini slices dry with a tea towel and arrange them on the baking sheets without overlapping. Lightly spray with avocado oil or brush on liquid oil.
  5. Mix smoked paprika, ground pepper, and remaining salt in a spice shaker, then sprinkle over the zucchini slices.
  6. Bake for 70 to 90 minutes until crispy and browned, rotating sheets halfway through.
  7. Serve immediately while warm, adding additional salt if desired.
