  • 1 1/2 cups flour (white, spelt, or oat)
  • 1/3 cup sugar
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp cinnamon (and optional 1/4 tsp allspice)
  • 1/2 cup raisins
  • Chopped walnuts
  • Shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the applesauce, water, oil (or applesauce), vanilla extract, and vinegar.
  3. In another bowl, combine the flour, sugar, salt, baking soda, baking powder, and cinnamon.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into a greased 8-inch pan and bake for about 18 minutes or until a toothpick comes out clean.
  6. Allow cooling before serving.
